MICROWAVE MANICOTTI
(Serves 4-6)
1-box manicotti shells
2-cups cottage cheese
2-cups mozzarella cheese (grated)
2-eggs
parsley if desired
1-jar spaghetti sauce
Boil shells in pasta cooker on high for 9 mins or until barely tender, drain & set aside
Mix cottage cheese, eggs, parsley & mozzarella til well blended.
Coat bottom of Large Shallow Vent N Serve with spaghetti sauce
Slice shells open with scissors & fill with about 2 T. of
cheese filling.
Roll up & place seam side down in pan
Pour remaining sauce over filled shells
Sprinkle grated mozzarella on top
Microwave on 60% for 8 minutes. Let stand for 5 min.
